Mushroom Delight Omelette

Omelette

Ingredients:

  • 1/3 cup of light cream cheese
  • 1/2 cup of milk
  • 8 large eggs
  • 1 large chicken breast, cooked and shredded
  • 6 large white mushroom, halved and sliced
  • 1 tsp of garlic powder
  • 1/2 tsp of salt
  • 1/2 tsp of baking powder
  • 1/2 cup of shredded light cheddar cheese

Preparation:

  1. In a large bowl, mix cream cheese, milk, eggs, cooked chicken, mushroom, garlic powder, salt and baking powder (all ingredients except for the cheddar cheese)
  2. Transfer mixture into a 12 x 8 inch baking dish lined with parchemin paper
  3. Bake in the oven at 350F for 25 minutes
  4. Remove from the oven, and add grated cheese
  5. Broil in the oven at 450F for 5 minutes or until the top has browned to your liking, and enjoy!
