One-pot Chicken Quinoa

Are you tired after coming home from work or do not have hours to prepare supper? Do you want a healthier alternative to restaurant bought foods? Here is a great recipe that you can make in less than an hour.

Difficulty: Medium
Preparation time: 1 hour

Ingredients:
– Salt
– Garlic powder
– 2 tbs of vegetable oil
– 2 tsp of chicken broth powder
– 1 tsp of dried oregano
– 2 garlic cloves
– 1 small onion, diced (or ½ large onion)
– 2 small tomatoes, diced (or 1 large tomato)
– 1 bell pepper
– 1 medium zucchini
– 1 cup of uncooked quinoa
– 1 ¾ cups of water
– 4 skinless chicken thighs

Preparation:
1. Season chicken thighs with salt and garlic powder
2. In a pot, add 1 tbs of vegetable oil and brown the chicken thighs for 2-3mins each side on high heat
3. Remove chicken and set aside
4. In the same pot, put 1 tbs of vegetable oil and brown onions
5. Add tomatoes, bell peppers and oregano and cook for 1-2mins
6. Add water, chicken broth and garlic cloves, and bring water to a boil
7. Add quinoa and let simmer for 7-8mins over medium heat
8. Return chicken and let simmer for 7-8mins
9. Add zucchini and mix
10. Remove from heat and enjoy!
